ACAI BOWL
Heat. I crave it. I find something so comforting about warmth on my skin. Big jumpers, warm studios, open fires, herbal tea, big mugs of coffee, beaches, the sun. I feel like my body works better when it’s warm; better at moving but also at staying still, curling up into myself happy and safe. Being cold paralyses me a bit.
I think that’s why I get on with Australia so well, everything from the yoga studios to the air is hotter. And then you combine that with the sea. They say salt water is the cure for everything: tears, sweat and the sea, and I’m sure it’s true; because every time I go to Australia I come back feeling light. I’m not saying I want to move there. I’m creating my dream right here, but that small two week dose of sun I am so fortunate to have each year heals me right down to my core.
The taste of acai takes me back to Australia. It makes me think of summer and warmth and spending time just me and my mum, coffees in hand, down by the beach. And this recipe? It’s super simple, easy and quick. Created because getting hold of frozen packets of acai pulp, like they use in Australia, is both hugely expensive and kinda impossible here in England. (This recipe uses the freeze dried powder instead - which you can actually omit if you want to).
Acai Bowl
Ingredients: {serves 1}
1 cup frozen blueberries
1 overripe banana
1 tbsp acai powder
1 heaped tbsp protein powder (optional)
A handful of granola (see a quick stovetop recipe below)*
Fruit slices for topping (strawberries and banana are my favourite)
Method:
Place the frozen blueberries, the banana, acai powder and protein (if using) in a blender and blend until it forms a creamy but thick, ice cream like consistency. (You may need to scrape the sides a couple of times to keep the mix moving in the blender).
Empty into a bowl and top with toppings of choice.
*Toasted granola (If you have no granola left this is created in 5 mins using a pan on the stove!)
(Make prior to blending up the acai bowl. This makes enough to top 2-3 bowls)
Ingredients:
¼ cup oats
1 tbsp coconut flakes
1 tsp coconut oil
1 tsp maple syrup
1 tsp vanilla extract
Method:
Combine oats and coconut flakes in bowl.
In a frying pan melt the coconut oil on a low heat. Once melted add the maple syrup and vanilla and stir to combine.
Fold in the oats and coconut until coated in the sweet coconut oil mix.
Continue toasting the granola until the oats and coconut turn golden.
Empty onto a square of baking paper to cool and turn crunchy.
