THE FOOD PREP SERIES - CHOCOLATE OVERNIGHT OATS AND BLUEBERRY COMPOTE
I had this idea at the end of last year (like 2 days ago) that I could help others (and myself) be inspired to food prep. I didn’t want it to come from a place of restriction, dieting or meeting macros or even #gains but instead I wanted for it to be a movement of self care - to be about abundance and choosing nourishment. I wanted everything to be quick and easy to make - super stress free - but fun enough that it would encourage myself and others to eat well at each meal rather than grazing, or choosing something quick and easy in the place of something nourishing.
This is the first in the series. It is an easy overnight oats recipe that divides into two. Make it Sunday night for Monday and Tuesday, and then again Tuesday for Wednesday and Thursday (or whatever days you fancy/ need). I’ve created a blueberry compote recipe to top them with too - but you can always go for plain berries or even a chopped banana if thats more your thing. Find the recipe below.
The overnight oat pots: (makes 2)
100g oats
2 scoops chocolate protein
500ml almond milk
30g almond butter (or peanut butter)
Simply combine all the ingredients in a large bowl and mix well until completely combined. Empty evenly into two jars and store overnight. In the morning top with a spoon of compote (recipe below) and some extra fresh blueberries.
Blueberry compote: (makes enough for 4 breakfasts)
250g frozen blueberries
2 tsp honey/ maple syrup
1/3 juice of a lemon
1 tbsp water
Add everything into a saucepan and put onto a medium heat.
Allow to bubble away for 10 minutes, stirring every now and then until the berries become soft and.
Cool and store in a jar
