CHOCOLATE & BANANA PANCAKES
Do you remember, not all that long ago, when the ‘healthy’ way to have pancakes was to replace the flour with banana and protein powder? And then we realised we were being numpties - and that it just resulted in a slightly burnt chocolate flavoured gloop.
I’m not saying that we still don’t have negative and/or orthorexic ideas thrown around the internet, but I do feel more hopeful now that there are professionals on here with a vast array of knowledge. Navigating health with much more knowledge than us 2012 healthy eating noobs, who read somewhere that taking out flour would remove the carbs and sugar and make to make us thinner and healthier (#isbutteracarb?)
These chocolate pancakes have both banana and protein powder (and a load of other ingredients) in them but for a much different reason than before. The banana adds a delicious sweet flavour and the powder adds protein to an otherwise protein-less vegan breakfast (protein = helpful for muscle development and recovery in two very active humans). But you could replace the banana with a couple of tbsp of pumpkin puree and the powder with 2 tbsp each of ground flax seeds and cacao powder.
INGREDIENTS {serves 2}
1 cup plain flour
1 tsp baking powder
1/4 cup (1 scoop) chocolate protein powder
1 mashed banana
2 tbsp honey
3/4 cup oat milk
Pinch of salt
Oil for greasing
Toppings of choice
METHOD:
In a large bowl combine the flour, baking power, protein and a pinch of salt.
Next add the banana, honey and oat milk and stir well to combine.
The batter should be thick(ish) and creamy. Add a splash more milk / flour to adjust as needed.
Heat a non-stick pan on a medium heat and grease with a little oil.
Add a 1/4 cup of mixture at the time, smoothing out the back of a fork or spoon.
Once it begins to bubble flip and cook the other side
Repeat for all the mixture. (Pop the cooked pancakes in a a heated oven to keep them warm!)
Serve up with lots of toppings. YUM!
