EASY PB AND CHOC CHIP COOKIES
I grew up eating cookies very similar to these; every evening before bed I would take two cookies and a cup of tea and sit in front on the television. I would dunk them in my tea and slurp up the gooey, sweet oats. Bliss. And then I went to university and stopped making them I hadn't thought about them for years until I moved in with my boyfriend and realised 1. It's hard to buy cookies plastic free (we had given up plastic for lent at the time... which you can read about HERE). 2. My boyfriend eats a lot and having a big batch of cookies in is a lifesaver 3. I find baking really therapeutic. And so these cookies were born. They're simple and easy to make, plus (at a time when baking supplies are hard to get hold of) are pretty versatile: you can swap the peanut butter out for any nut butter, brown sugar for any sugar, plain flour for what every (plain-ish) flour you can find etc.

{Makes 12-15}
Ingredients:
150g peanut butter (or preferred nut butter) 180g brown sugar (but any fine sugar works) 1/4 cup almond milk 1 flax egg (1 tbsp flax seeds combined with 3 tbsp water and left for 10 mins to gel) OR normal egg (OR a mashed banana/ 3 tbsp apple sauce work here too if you are struggling to find eggs!)
1 tsp baking powder 1 tsp bicarb 120g plain flour 100g oats 75g chocolate chips
Method:
Pre heat oven to 180 degrees
Mix peanut butter and sugar until thick and paste like
Add almond milk and flax egg and stir until smooth
Add a pinch of salt with the flour , bicarb and baking powder
and mix until become a thicker dough
Add the oats an chocolate chips and mix through (it will be super
thick!)
Using hands roll into little balls and then flatten slightly before
putting onto tray
Bake for 12-15 minutes until golden brown
