EASY PEANUT BUTTER CEREAL BARS




INGREDIENTS

120g peanut butter (very heaped 1/2 cup)

80g honey - (very heaped 1/2 cup)

25g coconut oil (melted) - (scant 1/4 cup)

75g* cereal of choice (we have used cheerios and corn flakes) - (1.5 cups)

1 heaped - tbsp vanilla protein (optional) - 15g

2 tbsp granola (could sub for chopped nuts) - 20g


*the weight of cereal is likely to vary depending on the type you choose. Puffed rice is going to be lighter than flakes, for example, and so using the cups measurement, here might be useful at first as you figure it out. If you haven’t got measuring cups don’t worry, use a small-medium sized mug.


METHOD


+ Start by lining a loaf tin with grease proof paper. Set aside.

+ In a large bowl combine the peanut butter, honey, and melted coconut oil until smooth.

+ Add in the cereal, protein powder, and granola, and mix until all the cereal is fully coated.

+ Empty the mix into the lined loaf tin, spreading evenly.

+ Pop into the fridge for 1-2 hours to set.

+ Once set slice into bars. Store back in the fridge. Enjoy!
