THE BEST BISCOFF WHITE CHOCOLATE COOKIES
Ingredients: {makes 12 cookies}
200g plain flour
180g soft brown sugar
1 tsp baking powder
30g coconut oil (melted)
70g biscoff
80g almond/oat milk
65g white (or any) chocolate chips
Method:
+ Preheat the oven to 185 degrees C & line two large baking trays.
+ In a large bowl combine the flour, sugar, baking powder and a pinch of salt. Set aside.
+ In a mug or small bowl mix the melted coconut oil and the biscoff spread until smooth.
+ Pour this over the dry ingredients. Stir until it begins to combine to form a crumbly consistency.
+ Add the milk. Stir to combine and then use slightly wet hands bring together into a dough.
+ Add in the chocolate chips.
+ Take a spoonful of the mixture at a time (around 50g or so), roll into a ball and then slightly flatten onto the baking tray. Repeat to form approximately 12 cookies .
+ Bake for 10-12 minutes until slightly golden.
